Easy Persimmon Salad

fuyu persimmon saladOk so I always forget to take pictures of my finished salads but this is so easy you don’t need a picture 🙂   Be sure and buy the flat persimmons the taller ones are for baking.  Let me know what you think.

Ingredients:

  • 1 bag of organic Trader Joes mixed greens
  • 1 bag of TJs candied pecans
  • 1 container of crumbled goat cheese
  • 2-3 Fuyu (Jiro) Persimmons (ripened and ready to eat)

Dressing:

  • one meyer lemon
  • 2 tablespoons of sugar (I use baking sugar it breaks down better)
  • 4 tablespoons of honey
  • ¼ cup of olive oil
  • one very small shallot or one that is cut to about an inch in size (don’t need much)

Put salad ingredients together.  To cut persimmon just remove skin and then cut in half.  Then remove the hard center by cutting it out.  Then you can slice into small bite size pieces into salad.  I let my persimmons sit on counter for up to a week before I use them to get them ripe.  Mix dressing ingredients in your blender.  I have a commercial one so it will blend the shallot ET all.  Then pour over salad and eat J
