Easy Microwave Carmel Salted Rice Krispy Treats

I made this up last night with things I had in my kitchen. They taste much better than they look. Bring them for a Super Bowl party 🙂


3 tablespoons of butter
I package of marshmallow
6 cups of rice Krispy cereal

Carmel sauce:
10-15 Carmel’s (I used worthers)
1/4 cup of brown sugar
2 tablespoons of butter
Sea salt on top to taste

Start by putting butter and marshmallows in a large microwave glass container and put on high for 2 minutes. I had to stop mine towards the end because the marshmallows were getting so big they were almost touching top of microwave. I didn’t want a mess so watch for that. Next I stirred it with a spatula (so it wouldn’t stick) until it was fluffy and added the 6 cups of Rice Krispies. Then put it into your square or rectangular Pyrex pan. Set aside and work on carmel sauce. Place Carmel butter and brown sugar in a large Pyrex measuring cup and microwave for about a minute removing it when butter melts. This depends on how high your microwave works some are faster than others. Stir the mixture till it’s blended and thick. If you want it thicker you can add a few more carmels and microwave for a short while but be careful not to burn mixture. Then pour on top of Rice Krispies add a little sea salt and let set. That’s it enjoy 🙂


Easy Chicken Enchilada Dinner

Ok so this is for a night when you come home and only have 15 minutes to get dinner done. It’s easy and the kids all ate it :). Serve with salad and you are set. Sorry my photos are not the greatest, kids dug in to fast before I could snap a picture 🙂


Trader joes Chicken Taquitos (10 per packet in frozen section, these are gluten free) I use 3 packages for family of 5
Trader joes sliced black olives
Fresh chives or green onions
Trader joes Mexican blend cheese
Hatch red enchilada sauce (medium it is the best and gluten free)

There are 5 of us so I usually make 3 different pans of these (which means I use 3 packages of taquitos). I use glass Pyrex in various shapes to lay them out. Lay the taquitos in bottom of pans. I make one pan with just Taquitos, enchilada sauce and cheese. Then one is with everything above and the last pan is with special goat cheese. Yes I have 2 of us that are gluten and dairy intolerant. So after you put down taquitos pour sauce (I use 2 cans for 3 pans) over taquitos enough to cover. Then place cut chives, olives and cheese on and you are done. Bake uncovered for 15 minutes at 350 degrees.

Quick and Easy Kale, Roasted Sesame Seed Salad

Over New Years we had dinner at one of our favorite sushi places in Tahoe called Mamasake.   They had this yummy kale salad that I just had to re-create.  My friend Marguerite came over for lunch yesterday so we added a few things to it.  Below is the recipe.  Really easy and yummy.  Even my husband who I push kale on too much liked it!  Or maybe he was just hungry 🙂  Let me know if you make it.  Oh yeah I also put the amazon links for the toasted sesames and organic sesame oil in case you don’t have time to go to the store.kale salad

Serves 4, Prep time 10 minutes

Start by pouring half of the kale bag into your salad bowl.  Then I use my kitchen scissors to cut into smaller bite size pieces.  This is something I am crazy about I like bite size pieces.  Next put in the avocado and cheese if you are using.  Then you need a small mixing bowl to make dressing.  Place all the oil, seeds, rice vinegar and lemon juice into a bowl and whisk together.  Add to kale, toss and season with sea salt and pepper to taste.  That is it you are done 🙂  Enjoy!

New Years artichoke, goat cheese and spinach frittata

I made this for Christmas breakfast and thought I would share it with you all for New Years 🙂


Serves 4 and takes about 30 minutes to cook

6 organic large eggs
1 can of traders joes artichoke hearts packed in water
I package of trader joes uncared apple smoked bacon
Chives chopped bite size
Spinach trader joes organic bagged (I use half bag)
Traders joes crumbled goat cheese

I start by cooking bacon (I cut small bite size pieces) with my kitchen scissors into small pan with lid. This makes for less mess and makes bacon crispy. Then while bacon is cooking I whisk eggs together with chives then I add artichoke hearts cute in 1/4 pieces with spinach. Next I drain bacon on a paper towel and set aside. I start cooking the egg mixture on medium so that it starts to set but doesn’t burn bottom. Before mixture gets too hard add the bacon pieces to it. Then be patient and let it cook and bubble on top. While it is cooking move the pan around to distribute loose egg on top to cook. Once you are sure eggs are cooked on top add the goat cheese on top and let melt. My theory is everything tastes better with goat cheese. Then cut in 4 quarters and serve. Hope you enjoy and happy new year!

Easy Persimmon Salad

fuyu persimmon saladOk so I always forget to take pictures of my finished salads but this is so easy you don’t need a picture 🙂   Be sure and buy the flat persimmons the taller ones are for baking.  Let me know what you think.


  • 1 bag of organic Trader Joes mixed greens
  • 1 bag of TJs candied pecans
  • 1 container of crumbled goat cheese
  • 2-3 Fuyu (Jiro) Persimmons (ripened and ready to eat)


  • one meyer lemon
  • 2 tablespoons of sugar (I use baking sugar it breaks down better)
  • 4 tablespoons of honey
  • ¼ cup of olive oil
  • one very small shallot or one that is cut to about an inch in size (don’t need much)

Put salad ingredients together.  To cut persimmon just remove skin and then cut in half.  Then remove the hard center by cutting it out.  Then you can slice into small bite size pieces into salad.  I let my persimmons sit on counter for up to a week before I use them to get them ripe.  Mix dressing ingredients in your blender.  I have a commercial one so it will blend the shallot ET all.  Then pour over salad and eat J

Nighty Night Tea-gets you to sleep fast

Just for kids Nighty Night teaNighty Night TeaRarely do I have trouble sleeping, but if I have a cold or cough I usually have to take some kind of cold medicine to knock me out.  Not now that I found this Nighty Night tea (nighty night tea at amazon.com.  The natural herbs in it definitely make you drowsy, like NyQuil without all the alcohol (I love NyQuil too but you can only take it 3 days).   And they have a kid version too.  My son loves to drink it when he has trouble falling asleep sometimes after late sports practice.

Just wanted to pass this along to all of you.  You can get it at most super markets and Target also carries it.

Gluten Free Chicken Sausage Soup

Igluten free chicken sausage soupngredients:

  • 1 package of Trader Joes Sweet Italian Style Chicken Sausage
  • 2 large box containers of Trader Joes Organic Chicken Broth
  • 2 ears of fresh corn cut off cob
  • 1 package of Trader Joes Organic Green beans trimmed and cut bite size
  • 1 cup of Trader Joes Organic baby carrots cut bite size
  • ½ package of Trader Joes wheat free corn penne pasta
  • 5-6 fresh basil leaves
  • 1 teaspoon of red pepper flakes (more if you want it spicier)
  • salt and pepper to taste

Place both containers of chicken broth into stock pot and turn on high.  Next add in sausage to boiling chicken broth by squeezing out bite size pieces from casings.  Once you have removed all sausage from casings you can start to add your veggies.  I start with the beans and spices and let them cook for about 5 minutes then I add the remaining veggies (the corn and carrots) for another 5 minutes.  Then I add the uncooked penne pasta for 10 minutes on low.  By now you should have everything in your pot cooking.  Then after 10 minutes I turn off the heat and let the soup sit for at least a half hour or a little longer.  The longer it sits the better it tastes 🙂
